Tempeh Salad in wrap form:)

The kids are sleeping and the house is quiet for a moment, so I thought I would write! I got home right about lunchtime today and when my kids are hungry, it's time to eat, fast:) I don't have any leftovers in the fridge at the moment (poor planning), so I am left to make something quick and my go-to meal (besides PB and J), is a wrap!  We buy these tortillas that you cook as you need, so just about anything you put in there is delicious, which works wonders for me b/c I can sneak anything in there and guess who eats it up, yup the kids!!  The usual is a little bit of daiya cheese (I will go into depth about this vegan cheese later but basically, it Rocks!!) Anyways, I did the cheese, a handful of black beans, and a spoonful of tempeh salad(which is a powerhouse protein meat substitute made from legumes and grains, trader joe's has the besting tasting in my opinion) and no-heat jalapenos (for my oldest!) That's it, and I served this with some peas and salad, call it a meal and eat!! Yes that is my 1 year old, eating it up!!


Tempeh Salad:
1 package tempeh
1/4 red onion, chopped finely (I sometimes mix this after, giving the kids the no onion version)
3 stalks celery, chopped finely
2-4 TBSP relish (i found a super yummy one at whole foods, with no High Fructose)
1/4-1/2 cup veganaise (this is more of a personal preference)
salt and pepper to taste
dash of Bragg's amino acids (if you don't have this at home, GET IT, it tastes the same as soy sauce, but so much less sodium, I put this S**t on everything, as Red hot would say!!!


Mix together and enjoy!!

The beginning...

So...  We are officially past the thanksgiving holiday in my house, with only a slice of pumpkin pie and a lil bit of sweet potato casserole left and I have decided to blog.   Yes, this is a big decision for me because the thought of doing a consistent "diary" in my view is a challenge to say the least!  I have always had a diary growing up and they all look the same, at the beginning there is an entry for every day, then about a week or two into it, the entries dwindle to every other day, then before you know it I am writing every 6 months!!!  I mean, really, I am somewhat ashamed, because I love the idea and being able to look back on what I was doing, feeling, etc.  So,  back to my point, I have decided to blog, if not for me, then for my children to look back on and see what we were doing and most importantly, eating at that time:))  If you have not guessed by now, me and my hubby are total foodies, always trying to outdo each other in the kitchen, which leads to some pretty great meals, but all in all we are constantly trying to better ourselves and meals, it is a constant learning process, but it's nice to do together.  I did have a social networking page but I feel better when I don't have status updates in my face constantly.  I wanted to have a place where I could just visit when I felt like and then close the computer up and forget it.  But I miss the feedback I would get there, posting my food pics and having people share their stories, ideas, suggestions, questions, all of that.   I am promising right now to attempt to write everyday or every other :)  depending on the kids....
